Restaurant JAG is known for featuring a vegetable-centric menu that changes with the seasons. While the menu is vegetable-centric, that doesn't mean there's no meat and seafood; the restaurant does a great job at featuring the seasonal vegetables by pairing them with various proteins. I had the pleasure of trying out their Winter menu and I walked away impressed.

The Food

I had the Winter Grand Dinner at Restaurant JAG. Do note that their menu changes seasonally, and you may not get the same options even if you were to dine next winter.

The canapes weren't the most memorable but they were definitely pretty to look at.

I love good bread and the brioche at Restaurant JAG were a treat, especially when paired with the salted butter and curry leaf butter. Please try the curry leaf butter if you have the chance, I think you will be surprised by it.

The amuse bouche looked plain but most certainly wasn't. It was smooth and luscious, and packed with flavour. However, given the number of courses on the menu, I wished the restaurant went with something lighter on the palate.

The next dish captured my attention the moment it was served; I've not seen such a beautiful dish in a long time. The salmon was fresh, and the various garnishes provided a textural and flavour contrast to the fish.

The next dish of parsnip and king crab stuck to the same formula as the fish dish earlier. By pairing various vegetables with a seafood, the restaurant allows the natural flavours of the seafood to shine, while using the vegetables to provide textural and flavour contrasts.

The onion consommé was a welcomed change from the previous two dishes. Despite how clear the broth looks, the taste was refined but intense.

The veal dish was interesting. I like the flavour, as well as how they prepared it but the dish just felt a little too greasy for me.

The next dish of Japanese sawara was probably the highlight for the night. I loved the delicate fish, and while the butternut squash can feel heavy on the palate, the chef did a great job by adding citrus fruits to provide that little bit of acidity that the dish sorely needed.

There was a palate cleanser next, and while there wasn't anything remarkable about it, the dish did its job in preparing me for the main course.

Finally, it was time for the main course of guinea fowl. I was told that this is the signature dish of the restaurant, and I understood why. The guinea fowl was tender and moist. I've never had celeriac before, and I was pleasantly surprised by it. There's a mild fragrance to it, and it was smooth. I thought it was the perfect pairing for the guinea fowl.

Last but not least, it was time for desserts. I won't go through all of them in detail, but suffice to say that they were all pretty good, and it was difficult for me to pick a favourite. Kudos to the restaurant for catering to my dietary preferences, as I opted out of the cheese trolley, and they gave me a pear instead (I was too full to try all the cheeses available).

The Venue

There aren't many restaurants with a nice view of the Singapore River, and I dare say Restaurant Jag is one of the best if you are looking for a meal with a view. The whole venue is intimate, there aren't that many tables, and most of the tables do come with a view of the river.

Conclusion

I enjoyed my meal at Restaurant Jag, and the service was a highlight. The staff were charming, and they were never in a rush. They took their time to explain the dishes, listened to the customer, and were more than happy to engage in a conversation.

If you are looking to dine at Restaurant Jag, do try to get a table that gives you a view of the river. Once you are there, sit back and relax, as the restaurant takes you through a culinary journey.
